Where To Find Old App Notifications Galaxy S10

Default app notification sounds no longer available

I just upgraded from a Samsung Galaxy S10 to an S21. The phone is using Android 11, and the UI version is 3.1.
Since the upgrade, I can't get apps to use their own unique, built-in, default notification sounds like I was able to for many, many years prior. Everything defaults to the phone's default notification sound (currently Verizon Alert).
For instance, I use Microsoft Outlook for my work email. Outlook has its own notification sounds for receiving new emails as well as a couple of other sounds. But when I go to choose the notification sound for Outlook, the only choices I have are the system's notification sounds. The Outlook sounds are not available to choose.
The same thing is true with other apps that I use frequently and need to be able to distinguish between notification sounds. One exception is Slack; it's notification sounds are available to choose in the Custom category.
I have Googled for HOURS, and I see where tons of other people are having the same trouble, but I'm not finding any satisfactory answer. For instance, I've seen several people mention the ESPN sound is no longer an option. I don't want to (and shouldn't have to) download Zedge or any other app to download notification sounds when I should be able to just use the app's provided notification sounds - like I've been doing for YEARS.
What am I missing?

As Samsung provides it's own updates for the OS, and this issue may be related to One UI 3.1, I suggest you contact Samsung Support for assistance with troubleshooting:
